Some might think we are drifting away from BBQ season but they forget we are skipping into tailgate party season*. One of the things I love about this recipe is that even if it is too cold to BBQ outside - you can make this in the oven and have a little tailgate party in your living room.
So don't write this off because the picture was taken at sunset and is all rosy and well - not my best work - because this is a handy little recipe that makes a whole meal for 4 with little clean up required.
Burger & Veggie Packet
- 4 Cups Match Vegan Meat - Burger or Gimme Lean - Burger
- 2 Tablespoons Vegan Worcestershire Sauce
- 1 Teaspoon Lemon Pepper
- 1/2 Teaspoon Onion Powder
- 2 Cups Frozen Veggies (We went with Carrots and Mixed Green Beans and it was perfect)
- 2-3 Cups Frozen Steak Fries
- 2 Ears Corn (cut in half - making 4 total)
- 1/2 Teaspoon Garlic Pepper
- 1 Clove Garlic (minced)
- Olive Oil Cooking Spray
- Whole Wheat Burger Buns and Hamburger Fixings
If you are grilling - heat your coals. If you are using your oven, heat oven to 425.
Cut 2 pieces of foil that are both about the size of a cookie sheet.
In a large bowl, mix Vegan Beef, Vegan Worcestershire Sauce, Lemon Pepper, Minced Garlic and Onion Powder. Use your hands and really get them in there. Then make into 4 patties - each about 1/4 inch thick.
Evenly place the Patties and the Corn Cobs on one of the sheets of foil. Top the Patties and Corn with Veggies, Fries and Garlic Pepper. Lightly spray the food with Olive Oil Cooking Spray. Seal the other sheet of foil over the Patties and Veggies. Make sure you fold the bottom foils edges up when you seal the packet to keep the steam and Oil from escaping the packet.
Grill or Bake the packets for around 20 minutes. Move the packet around to make sure it gets even heat.
To open, cut a large X in the top and be careful of the steam. it can get 'cha.
