Now if you're not familiar with Devil's Food Cake it is light, fluffy chocolate cake that has a hint of coffee to it. Now some doesn't have the coffee in it but the fancy ones do and who doesn't want to be fancy?
Who's ready to bake some cupcakes?
Devil's Food Cupcakes (We made 3 dozen mini cupcakes with this recipe but it could also make 1 1/2 dozen regular sized ones)
- 2 1/4 Cups All Purpose Flour
- 1 2/3 Cups Sugar
- 3/4 Cup Margarine
- 2/3 Cup Baking Cocoa
- 1 1/4 Cup Brewed Coffee (room temperature)
- 1 1/4 Teaspoons Baking Soda
- 1 Teaspoon Salt
- 1 Teaspoon Vanilla
- 1/4 Teaspoon Baking Powder
- 1 Tablespoon + 1 Teaspoon Applesauce
- 2 Teaspoons EnerG Egg Replacer
Heat oven to 350. Put your cupcake liners in your cupcake pan.
In a large bowl, blend all ingredients with an electric hand mixer for around 2-3 minutes. You want your batter to be light and airy. I find it helpful to tilt the bowl slightly to help the batter get more more fluffy.
Fill each cupcake liner 2/3 of the way and bake for 5-8 minutes for mini cupcakes and 8-10 minutes for regular sized cupcakes. You'll know they are ready when you can remove a bamboo skewer or toothpick form the center cleanly.
Let them cool on a wire rack before decorating.
To make The Mummies : We used White Buttercream Frosting & Green Cake Decorating Gel. Try to make sure your Gel is not made with Gelatin - many are. If you can't find a Vegan version - you can always use Agave Nectar with green food coloring. |
White Buttercream Frosting (for your mummies and various other cupcakery)
In a bowl, blend Powdered Sugar, Margarine, Vanilla and Soy Milk with an electric hand mixer until smooth and creamy. If it is a little thick blend in more Soy Milk or add more Powder Sugar if it is too thin.
- 3 Cups Powdered Sugar
- 1/3 Cup Margarine (softened)
- 1 1/2 Teaspoon Vanilla
- 2 Tablespoons Soy Milk
To make Orange Frosting : Add 1 Drop of Orange Food Coloring to every Cup & 1/2 of White Frosting and blend with your electric mixer. |
Just put about 1 teaspoon of White Buttercream to secure the Walnuts. Then apply the Green Gel over the exposed White Frosting and sprinkle with Red Crystals.
- Whole Walnuts
- Red Sugar Crystals
- Green Decorating Gel - Please remember to read your labels because a lot of them have Gelatin. If you can't find any without Gelatin - just add green food coloring to Agave Nectar.

This is going to demonstrate my ignorance, but I never knew that Devil's Food was a chocolate + coffee flavor combo. Learn something new, right?
ReplyDeleteI never knew it either and there seems to be some debate on whether it is necessary if your chocolate is dark and pure enough - etc... but the coffee adds a little kick to these cupcakes that is kinda special or you can just use water instead and get a lighter cake. Either way the cake isn't that rich more airy and I prefer than texture anyways. :)

ReplyDeleteHey there- love the idea of the Betty Crocker Project. I am on a quest for a good Vegan Choco Chip Cookie recipe. There was a cafe in Minneapolis, "The New Riverside Cafe," sadly gone now, that had delish. vegan Choco Chip cookies, which I believe were made with Maple Syrup (or possibly just brown sugar). They were extra good because they had this wonderful sort of chewy shortbread texture. Any good recipes or any thoughts on how to get that great texture?
ReplyDeleteI made the Vegan Devil's Food Cupcakes & White Buttercream Frosting for a Halloween Shindig I threw. All my fiance's buddies that were coming were non-vegan, so I was more nervous than I probably would have been otherwise. All I was going to be providing were vegan treats & people come with a prejudice! I've been following your blog for awhile, and I also follow you on facebook, but I hadn't yet tried any of the recipes you'd posted. Your pictures are beautiful and many, many things have looked fantastic, and I am so glad that I finally decided to make something from your blog!
ReplyDeleteThe cupcakes turned out DELIGHTFUL. They were light, moist, fluffy, and had an incredible flavor. My toddler got to lick all the spoons and bowl used for making them and it was obvious the batter was a hit too! I didn't get the time to decorate them as you've shown here, but I love the idea! The mummy & zombie brains are adorable. Maybe next year! (Or ANY time really, who needs a holiday to eat ZOmbie Brain Cupcakes??)
The White Buttercream Frosting was super easy to make as well and tasted fantastic! I've never loved any homemade frosting I've attempted yet until this one. So, thank you!!
After I made the cupcakes & put them into the oven I thought, not for the first time, that there's no way these are going to be awesome. That was just way too easy to make!! I tried to keep a positive energy and thoughts flowing towards them though, but I was skeptical with the ease of it. Turns out, as you now know, they were great!!
Here are some the things I heard regarding the cupcakes with frosting:
"Mmmmmmh, yummy!"
"Oh wow, these are really good!"
"Oh Shell, these are fantastic."
"Oh my gosh, these are soo good."
"They were really great!"
"You MADE these?!"
"These are VEGAN??"
"Wow, these are just like ones you'd buy at the store!"
"They're not as terrible as I thought they were going to be." <--- and that last comment was from a nay-sayer who obviously couldn't find anything at all wrong with them, so that was his way of a compliment. (He DEVOURED the whole entire thing.)
I'm looking forward to trying out more from your site now, for sure. Thanks a lot!!
