Cherry, Walnut & Chocolate Chip Cookies
- 2 1/4 Cups Whole Wheat Flour
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1/2 Cup Sugar
- 1/3 Cup Brown Sugar
- 1/2 Cup Margarine (softened)
- 1/2 Cup Olive Oil
- 3 Tablespoon Water
- 1 1/2 Teaspoon Vanilla
- 1 Cup Dried Cherries
- 1 Cup Vegan Chocolate Chips ( we found some really good ones at Trader Joes)
- 1/2 Cup Crushed Walnuts
- Pinch of Cinnamon
- Pinch of Nutmeg
Heat oven to 375.
In a large bowl, mix Flour, Baking Soda, Cinnamon, Nutmeg and Salt.
In a large bowl, blend Sugar, Brown Sugar, Margarine, Olive Oil, Water and Vanilla with an electric hand mixer at a low speed until smooth.
Add the Flour mix to the Sugar mix and blend with the hand mixer until smooth. Mix Cherries, Chocolate Chips and Walnuts into the dough with a large spoon. Drop a spoonful of dough onto the cookie sheet for each cookie about an inch apart. Bake for 8-10 minutes. Pull them out when they are golden brown.
Those cookies look great! I never made cookies with dried cherries.
